INGREDIENTS
( Serves - 2 )
- Carrot - 450 gms (finely shredded)
- Milk - 1 1/2 cups
- Sugar - 5 tbs (or according to taste)
- Cardamom
- Nuts (Almond, cashew)
- Dry grapes
- Ghee - 1 tbs
- Pinch of Kesar colour (if desired)
PROCEDURE
- Heat the pan in medium heat. Add little ghee and allow it to melt
- Put the shredded carrot and fry in ghee . This gives a very good aroma to the halwa
- Add milk in small quantities and keep stirring the carrot
- Allow the carrot to cook in the milk with constant stirring and add milk as required .
- It takes almost 20 mins for the entire carrot to get cooked
- Almost at about 15 mins, add sugar and stir well, the sugar then starts leaving water
- Keep cooking the carrot until it starts solidifying. Stir continuously at this stage as it may stick to the bottom as it solidifies
- The carrot will start changing colour indicating that it is fully cooked
- Meanwhile roast nuts and dry grapes in ghee
- Add roasted nuts, kesar, cardamom to the halwa and serve hot :)
